When metal react with nitric acid then it gives salt and water . It is due to because nitric acid is a strong oxidising agent so it oxidised hydrogen to water due to which are products are salt and water

Nitric acid is a strong oxidizing agent ..it oxidizes the hydrogen produced to water itself getting reduced to oxides of nitrogen ..hence when metals react with nitric acid the don't produce hydrogen .. only magnesium and manganese react with nitric acid to liberate hydrogen gas
