Carbohydrates which are soluble in water and crystalline in structure are known as monosaccharides and disaccharides. Monosaccharides are the simplest form of carbohydrates, and they cannot be further hydrolyzed into simpler compounds. Examples of monosaccharides include glucose, fructose, and galactose. Disaccharides, on the other hand, are composed of two monosaccharide units joined together by a glycosidic bond. Examples of disaccharides include sucrose, lactose, and maltose. Both monosaccharides and disaccharides are soluble in water due to their hydrophilic nature, and they can form crystals under certain conditions.
