Dental caries occur when acids are produced in our mouth. If we don't rinse our mouth after eating food, the leftover decomposes in our mouth causing the pH to go below 5.5. Thus, the bacteria present in our mouth release acids which when made in contact with the enamel (made of calcium hydroxyappetite, a crystalline form of "calcium phosphate" a basic salt), destroys the enamel. This is what leads to dental caries.
