Sunlight can be converted into usable energy only if it is trapped using solar cells ir in plants case, chlorophyll. Humans cannot trap sunlight and convert it into usable energy.

We are not have the proper enzymes to digest it or eat it and get energy from it

Because we doesn't have chorophyll pigment like plant which trap the sunlight . We also doesn't have certain things which can change a sunlight into a energy
