Because soft iron has high initial permeability so that magnetisation is large even for small magnetising field,low retentivity so that the magnetisation is lost as the magnetising current is switched off.

This is because soft iron has the property of losing its magnetism(or is able to be demagnetized) very quickly. An electromagnet works in this way: when current flows through it, it becomes magnetized, and immediately current stops flowing, it loses its magnetism. Hence, soft iron cores are the ideal material for this application
