Because nitric acid is an stong oxidizing agent and as soon as hydrogen is evolved in reaction between metal and nitric acid. Nitric acid oxidizes the hydrogen to water and itself is reduced to any of the oxides (nitrogen dioxide, nitrogen monoxide, etc.)
