Saliva contains salaivary amylase.They break down the starch into sugar.

Saliva is a fluid secreted by the salivary glands. It contains an enzyme called salivary amylase.

Salivary amylase catalyses the breakdown of starch into sugar, maltose. The food is mixed thoroughly with saliva and moved around the mouth while chewing.
