Aluminium foil have properties that help in keeping food packed inside it fresh for a long time as it acts as a barrier against light and oxygen, odours and flavours and moistness and germs, thus avoiding food decay. This also helps in stopping the fats in the food oxidising or turning rancid. It also allows storing without refrigeration.

To keep the food fresh and warm. Aluminium is less reactive so it don't react with the food. Foil provides a complete barrier to air, moisture and bacteria.
