Destarching is the process of removal of all the stored starch of a plant.
Plants get destarched when kept in dark for 48 hours because in dark they are not able to produce food by the process of photosynthesis as there is no sunlight available to run this process, so they have to use stored food(starch) in them by this they consume their starch and get themselves destarched.
