Fresh food contains fats and oils and it smells and tastes pleasant but it gets stale(not fresh/bad) when exposed to air for a longtime.its taste and smell gets unpleasant. The food is said to become rancid. This process is called rancidity.i.e. Oxidation of fats and oil present in the food.
