a) he shifts the pH level of milk so that the lactic acid formed by decomposition of milk get cancelled out by basic baking soda . So,to prevent it from decomposition (spoil) and formation of curd. b)when the milk is boiled it will take a long period of time to set into curd from its liquid state.
