Xanthophylls are a class of oxygen-containing carotenoid pigments,4 responsible for the color of many of the yellow, orange, and red hues of flowers, fruits, vegetables (corn, pepper, etc.), egg yolks, and feathers, shells, or flesh of many animal species (flamingo, canary, shrimp, lobster, chicken, or salmonids). Non-photochemical quenching is one of the main ways of protecting against photoinhibition. In higher plants, there are three carotenoid pigments that are active in the xanthophyll cycle: violaxanthin, antheraxanthin, and zeaxanthin.
