Emulsifiers are emulsifying agents which used in emulsions to stabilize the solution by forming an interfacial film b/w suspended particle and medium For exam:- in O/W emulsions are protein, gums, natural and synthetic soaps etc. in W/O emulsions are long chain of alcohol, heavy metal salt etc.
