According to law of conservation of angular momentum,as cat stretches it's body it's moment of inertia increases and therefore angular velocity decreases and therefore cat lands safely to the ground

But as you have asked it under physics i think it may be somehow related to restoring force -kx which may have been produced by the cats muscles

One possible answer acc to me could be As the muscles start moving with each stretch, they also flush out the toxins and waste byproducts that build up during periods of inactivity. For instance, carbon dioxide and lactic acid can accumulate in a cat's body, but stretching can increase blood and lymph circulation, which helps to remove the toxins, hence stretching is all about cleaning the muscles
