Milk is converted into curd by the help of LAB (lactobacillus lactis or strptococcus lactis). During growth the LAB produce acid that cingulate and partially digest the milk protein. It is called Lactic acid bacteria. It is present in curd . It is responsible for curding of milk. It digests the milk protein i.e. casein to form lactic acid. It aslo helps in checking diesase cause microbes in the stomach.
