Hydrolysis of sucrose is known as inversikn of cane sugar because sucrose is dextrorotatory but after hydrolysis it gives dextrorotatory glucose and lavorotatory fructose in equal amount however lavorotation of fructose is greater than dextrorotation of glucose hence mixture of glucose and fructose is lavorotatory.
