The process of converting yeast into alchohol is called fermentation .
Fermentation is the process in which a substance breaks down into a simpler substance.Micro-organisms like yeast and bacteria usually play a role in fermentation process.

Fermentation is the breakdown of organic substances by organisms to release energy in the absence of oxygen. For example - The anaerobic breakdown of carbohydrates by yeasts to produce alcohol and carbon dioxide, and the bacterial breakdown of milk sugar to give lactic acid.

Fermentation is the process by which, yeast produces alcohol while doing anaerobic respiration.
