Turmeric contains 3-6% polyphenolic compounds, collectively known as curcuminoids, which is a mixture of curcumin, demethoxycurcumin and bisdemethoxycurcumin. Curcuminoids are major components responsible for various biological actions. Turmeric is a natural acid-base indicator. It helps us identify the nature of any given substance by itself undergoing a colour change. It turns yellow in acidic medium and changes it's colour to red in basic medium.
